Plant Based Sofritas Burrito Bowls
Ingredients
- 3 (3.5-oz) pouches boil in bag brown rice
- 1 (14-oz) pkg extra firm tofu, well drained and crumbled
- 1 Tbsp Southwest seasoning
- 2 Tbsp olive oil
- 1 Fresh Cravings Restaurant Style Salsa
- ½ tsp ground chipotle chile pepper
- 2 avocados, thinly sliced
DIRECTIONS
- Cook rice according to package directions.
- Meanwhile, cook tofu and seasoning in hot oil in a large skillet over medium heat 3 minutes or until liquid is almost evaporated.
- Add Fresh Cravings Restaurant Style Salsa and chipotle pepper; simmer 10 minutes.
- Divide rice among 6 bowls; top with tofu mixture and avocado. Season with salt and pepper, if desired.
