Corn and Shrimp Skewers with Fresh Cravings Poblano Street Corn Dip

Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 tub Fresh Cravings Poblano Street Corn Dip & Spread
- 4 ears of fresh corn, husked and cleaned
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp cilantro
- ½ cup cotija cheese
- Salt and black pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Directions
Prepare the Marinade:
- In a bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. This will be the marinade for both the shrimp and corn.
- Place the peeled and deveined shrimp in a bowl and coat them with half of the prepared marinade. Allow them to marinate for at least 15-20 minutes.
- Cut each ear of corn into 2-3 inch pieces. Brush the corn pieces with the remaining marinade, ensuring they are evenly coated.
- Thread the marinated shrimp and corn alternately onto the soaked wooden skewers, creating a combination of shrimp and corn on each skewer
- Preheat your grill to medium-high heat.
- Place the skewers on the preheated grill and cook for about 3-4 minutes per side, or until the shrimp are cooked through and the corn is lightly charred.
- While the skewers are still hot, brush them with a little extra marinade. Top them with cotija cheese and cilantro and serve them alongside Fresh Cravings Poblano Street Corn Dip for dipping.
