Ingredients

  • 3 (3.5-oz) pouches boil in bag brown rice
  • 1 (14-oz) pkg extra firm tofu, well drained and crumbled
  • 1 Tbsp Southwest seasoning
  • 2 Tbsp olive oil
  • 1 Fresh Cravings Restaurant Style Salsa
  • ½ tsp ground chipotle chile pepper
  • 2 avocados, thinly sliced

DIRECTIONS

  1. Cook rice according to package directions.
  2. Meanwhile, cook tofu and seasoning in hot oil in a large skillet over medium heat 3 minutes or until liquid is almost evaporated.
  3. Add Fresh Cravings Restaurant Style Salsa and chipotle pepper; simmer 10 minutes.
  4. Divide rice among 6 bowls; top with tofu mixture and avocado. Season with salt and pepper, if desired.
