Spicy Pepper and Onion Scrambled Eggs
These veggies eggs go perfectly with Fresh Cravings salsa!

Ingredients
- ½ cup finely chopped onion
- 1 Tbsp olive oil
- ½ red bell pepper, diced
- 1 tsp ground cumin
- ½ tsp cayenne pepper
- ¾ tsp ground black pepper
- ¼ tsp salt
- 8 large eggs, lightly beaten
- ¼ cup Fresh Cravings Salsa
- 1 avocado, sliced
Directions
- Cook onion in hot oil in a large nonstick skillet over medium heat 4 minutes or until lightly browned. Add bell pepper, cumin, cayenne, black pepper, and salt. Cook 1 minute, stirring constantly.
- Add eggs; cook 2 minutes, stirring constantly. Cook until eggs are thickened and set. Serve eggs with salsa and avocado.
